I imagine that's because recipes like this came from hard times and people living in hard times don't usually have fresh lemons laying around the house. The vinegar in the mustard works the same as the lemons – which yous would typically pair with fish.

The recipe isn't rocket scientific discipline and everyone makes theirs a little differently. Mama's from Maryland so I've got a little Old Bay in my blood and I apply it frequently with fish. You don't have to apply Old Bay – salt and pepper will do the fox just fine.

If you don't accept whatsoever Quondam Bay only want a similar flavor, you can add a trivial celery seed and paprika with the salt and pepper and that'll get you shut.

Ingredients

  • 1 15-oz. can salmon, tuckered
  • 2 teaspoons yellow mustard
  • one egg, beaten
  • i small onion, finely diced
  • 1/two teaspoon Old Bay Seasoning*
  • Common salt and pepper to gustation
  • 1/4 cup dried bread crumbs
  • Vegetable oil

Instructions

  1. Remove skin and bones from salmon if desired.
  2. Combine salmon, mustard, egg, onion, Old Bay, table salt and pepper then stir with a fork until combined.
  3. Add bread crumbs and then stir to incorporate.
  4. Shape into half dozen patties.
  5. Add just plenty vegetable oil to a large skillet to coat the bottom well then heat over medium heat.
  6. Pan-fry salmon patties 3-4 minutes on each side or until gilt chocolate-brown.

Notes:

If you don't have any Old Bay, use a combination of celery salt and paprika.

These can be broiled or cooked in an air-fryer also (though they're not quite as practiced). Spray patties with cooking spray then bake at 400 degrees until browned.
